Vineyard Notes
A wetter than usual growing season with a long stretch of good weather from September through mid-October. The dry “Indian Summer” ripened the fruit slowly and steadily. We decided to create traditional Ice Wine by leaving a section of our Chardonnay vines un-harvested waiting for a hard frost. We lost a good portion of this allotment to birds during that time.
Winemaker Notes
The naturally frozen grapes were hand-picked and painstakingly whole-cluster pressed over a three-day period. The highly extracted, fragrant, rich juice (syrup actually), was cold settled two days and racked to a stainless steel tank. The yield from our frozen grapes was only 50 gallons per ton.
Food Pairing Notes
A perfect after dinner indulgence or pair with seasonal fruit, warm apple crisp, pumpkins crème brulé or an apple pear tart.
